RECIPE: Apple and Rhubarb Crumble

An irresistible autumnal delight to share with your crew – or better yet, just indulge in alone.
Apple and Rhubarb Crumble | Serves 8
Ingredients | Filling
- 8 Granny Smith apples
- 4 rhubarb sticks
- 1/2 cup sugar
- 2 cups water
- 2 cups plain flour
- 1/2 cup brown sugar
- 125g butter, softened
- 1/2 cup rolled oats
- 1/4 cup desiccated coconut
- 1/4 cup walnuts

Method
Peel apples, and cut into large chunks. Cut rhubarb into 2cm pieces.
Place apples, sugar and water into a saucepan, simmer for 10 minutes. Add rhubarb, simmer for a further 5 minutes.
For your crumble, combine flour and sugar. Add cubed butter to mixture, and continue to crumble it through with your fingertips, until its texture resembles wet sand.
Add cooked fruit to your favourite baking pan, followed by the crumble mixture, then top with oats, coconut and nuts.
Bake for 15 minutes in a pre-heated 180°C oven, or until your topping is crispy and gold.
