Ricotta Toast | 3 Ways

Ingredients | The Base

Start with a slice of fresh sourdough, and toast until golden. Generously top with ricotta that's whipped by either a hand-blender or stand-mixer. Whip for 2-3 minutes, until light and fluffy.

#1 Poached Pear and Walnut

Immerse 1 pear in a saucepan with 3 cups water, 1 cup caster sugar, and a tablespoon of cinnamon. Simmer for 20 minutes, until soft. Allow to cool slightly, slice, and arrange over ricotta. Sprinkle with walnuts followed by a drizzle of honey.

#2 Roasted Cherry Tomato

Preheat oven to 160°C and roast 2-3 garlic cloves and tomatoes on their vine for 20 minutes, until slightly blistered, and garlic softens. Arrange over ricotta, and season with cracked black pepper and salt. Add lemon zest for freshness.

#3 Prosciutto with Basil Pesto

Blend a small bunch of fresh basil, 1 garlic clove, ½ cup Parmesan, ¼ cup toasted pine nuts and ½ cup olive oil, until you reach a slightly crunchy consistency (avoid over-mixing as this causes bitterness). Arrange 2-3 prosciutto slices over ricotta followed by generous drizzles of pesto to serve.
